Ingredients
Eggs: 4 large
Tomatoes: 3 medium, finely chopped
Onions: 2 medium, finely chopped
Green Chillies: 2, finely slit
Ginger-Garlic Paste: 1 teaspoon
Cooking Oil: 2 tablespoons
Mustard & Cumin Seeds: 1 teaspoon (for tempering)
Curry Leaves: 1 sprig
Turmeric Powder: ¼ teaspoon
Red Chilli Powder: 1 teaspoon
Coriander Powder: 1 teaspoon
Garam Masala: ½ teaspoon
Salt: To taste
Coriander Leaves: A handful, finely chopped (for garnish)
Instructions
Heat the pan: Heat 2 tablespoons of oil in a pan or kadhai over medium flame. Add the mustard seeds, cumin seeds, and curry leaves. Let them splutter.

Sauté the aromatics: Add the chopped onions and green chillies. Sauté until the onions turn soft and translucent. Stir in the ginger-garlic paste and fry for 1 minute until the raw smell disappears.
Cook the tomatoes: Toss in the chopped tomatoes, turmeric powder, and a pinch of salt. Cover and cook for 3 to 4 minutes until the tomatoes turn completely soft and mushy.
Add the spice powders: Reduce the flame. Add the red chilli powder, coriander powder, and garam masala. Mix well and cook for 1 minute until oil begins to separate slightly from the masala.
Scramble the eggs: Crack the eggs directly into the pan. Let them sit undisturbed for about 30 seconds. Then, gently stir and scramble the eggs on medium-low heat until they clump together and blend completely with the tomato base.
Finish and garnish: Continue cooking for 2 to 3 minutes until the eggs are fully cooked but remain moist—avoid overcooking to keep them soft. Turn off the heat. Garnish with freshly chopped coriander leaves.
Pro Tips
Egg Texture: If you prefer large, chunky egg bites in your palya, scramble the eggs gently. For a fine, minced bhurji consistency, stir continuously while scrambling.
Tangy Twist: If your tomatoes aren't very tangy, you can finish the dish with a quick squeeze of fresh lemon juice or half a teaspoon of kitchen ketchup for a subtle, sweet-sour depth.
